Hilton is at the forefront, setting a bold target to cut its landfill contributions in half by 2030. This goal aligns with the United Nations’ Sustainable Development Goals to reduce per capita global food waste by 50% within the same timeframe. Hilton’s commitment is encapsulated in its Travel with Purpose 2030 Goals, which also feature objectives for reducing emissions that are verified by the Science Based Targets initiative (SBTi) and adhere to the Paris Climate Agreement.

The strategy is supported by Hilton’s global workforce, including 62,000 team members in the Asia Pacific region, and focuses on responsible travel and operations that not only address food waste but also enhance the social impact in the communities Hilton serves.

At Hilton Tokyo Bay, the introduction of AI-powered kitchens marks a significant advancement. Collaborating with Winnow, a leader in AI-driven food waste management, Hilton has introduced Winnow’s technology to its Asia Pacific properties. This system tracks daily food waste, aiding culinary teams in minimizing excess production. It highlights how savings can be found in food trimmings and encourages chefs to creatively reuse ingredients, like transforming leftover croissants into bread pudding. This initiative provides clear insights into the origins of food waste, offering ways to enhance cost-efficiency and make informed procurement choices.

Since adopting Winnow Vision in January 2020, Hilton Tokyo Bay has become a pioneer in Japan, harnessing data analytics to cut food waste significantly. In the first month alone, food waste was reduced by 30%, which translated into 17,016 meals saved and an annual cost reduction of approximately ¥3.3 million (around US$31,000). Following this success, the technology has been implemented in an additional 15 hotels throughout Japan.
